Bacon is cut from the fatty sides of a hog's belly. It is sliced and smoke cured with salt, brown sugar and water.
Ugly Bacon packages are still sliced cured bacon like above, but the packs are a bit sloppy, with slices going every which way!
Fatty Bacon comes from pigs that were a little big at processing. It's still great bacon, but it is definitely less sharp looking. Those big pigs make some phenomenally marbled pork chops though! *Contains Nitrates
